bell pepper, potatoes, pepper corns, dried marjoram

olive oil, salt   

Ingredients

8 new potatoes, thinly sliced

bullet

1 green pepper, thinly sliced

bullet

2 tablespoons olive oil

bullet

1/2 teaspoon dried marjoram

bullet

1 teaspoon salt

bullet

1/2 teaspoon crushed black peppercorns

bullet

Serves 4


Step 1

Preheat oven to 450˚F. Grease a medium baking dish. Arrange potatoes and bell pepper alternately in concentric circles in a dish.

Step 2

Drizzle olive oil over potatoes and bell pepper.

Step 3

Bake vegetables for 15 minutes. Reduce heat to 400˚F. Sprinkle marjoram, salt and crushed peppercorns over top.

Step 4

Bake until potatoes are browned and bell-pepper is tender, about 15 minutes longer.

Money Savers

To save money, you can use traditional Idaho or other Russet baking potatoes instead of the new baking potatoes. If the potatoes skin are clean and thin, there is no need to peel them for this dish.


Serving Variation

For a more colorful dish, use a combination of red, yellow and green bell peppers.
