Baked Beef Quesadillas

green chiles, flank steak, Monterey Jack cheese, flour tortillas

Ingredients

2 teaspoons vegetable oil

bullet

1 large onion, sliced

bullet

2 (4-ounce) cans chopped green chiles, drained

bullet

1/4 teaspoon salt

bullet

1 pound flank steak, cut into thin strips

bullet

8 ounces shredded Monterey Jack cheese

bullet

6 (10-inch) flour tortillas

bullet

Serves 6


Step 1

Heat oil in a medium skillet over medium heat. Add onion. Cook, stirring occasionally, until tender, about 10 minutes.

Step 2

Add chiles and salt to skillet; stir well.

Step 3

Preheat oven to 400˚F. Add steak to skillet. Cook over medium-high heat, stirring occasionally, until browned, about 5 minutes.

Step 4

Layer Monterey Jack, onion mixture and steak over 3 tortillas. Place on baking sheets. Top with remaining tortillas. Bake quesadillas until cheese is melted, about 5 minutes. Cut into wedges.

You can turn these easy quesadillas into a more cost-conscious dish. Simply substitute 1 1/4 pounds of cooked and well-drained ground beef for the flank steak.


Serving Variation

For a marvelous Mexican flavor, add 1 teaspoon ground cumin to the onion in step 1.
