Ingredients

3 pounds chicken pieces |
 |
1 teaspoon salt |
 |
2 teaspoons pepper |
 |
4 shallots, chopped |
 |
2 garlic cloves, chopped |
 |
3 fresh red chilies, chopped |
 |
1 tablespoon chopped fresh ginger |
 |
6 macadamia nuts, chopped |
 |
4 tablespoons vegetable oil |
 |
2 tablespoons ketchup |
 |
1 tablespoon brown sugar |
 |
1 tablespoon soy sauce |

Serves 4 |
Step 1
Rub chicken with salt and pepper. Combine shallots,
garlic, chilies, ginger and nuts in a blender; process to a course
paste.
Step 2
Heat oil in a large skillet over medium heat. Add past.
Cook, stirring often, for 2 minutes. Add ketchup, brown sugar and soy sauce;
stir until sugar dissolves.
Step 3
Add chicken to skillet. Cook chicken, turning once, until
browned on both sides, about 10 minutes. Meanwhile, preheat grill or
broiler.
Step 4
Remove chicken from skillet; reserve sauce. Grill chicken,
turning once and basting often with sauce, until juices run clear when meat
is pierced with a knife, about 20 minutes.
