Ingredients

3 pounds chicken pieces

bullet

1 teaspoon salt

bullet

2 teaspoons pepper

bullet

4 shallots, chopped

bullet

2 garlic cloves, chopped

bullet

3 fresh red chilies, chopped

bullet

1 tablespoon chopped fresh ginger

bullet

6 macadamia nuts, chopped

bullet

4 tablespoons vegetable oil

bullet

2 tablespoons ketchup

bullet

1 tablespoon brown sugar

1 tablespoon soy sauce

Serves 4

Step 1

Rub chicken with salt and pepper. Combine shallots, garlic, chilies, ginger and nuts in a blender;  process to a course paste.

Step 2

Heat oil in a large skillet over medium heat. Add past. Cook, stirring often, for 2 minutes. Add ketchup, brown sugar and soy sauce; stir until sugar dissolves.

Step 3

Add chicken to skillet. Cook chicken, turning once, until browned on both sides, about 10 minutes. Meanwhile, preheat grill or broiler.

Step 4

Remove chicken from skillet; reserve sauce. Grill chicken, turning once and basting often with sauce, until juices run clear when meat is pierced with a knife, about 20 minutes.

You can prepare the chicken through step 3 up to 8 hours ahead. Refrigerate until ready to proceed with step 4.

Money Savers

Macadamia nuts are widely available, but at a premium price. If you are watching your pennies, try cashews instead. They are less expensive yet will provide this dish with a similar sweet, nutty flavor.

Serving Variation

For a spicier chicken, sprinkle each piece with a pinch of cayenne or ground chiltipin in step 1
