Spanish Style Grilled Beef

Beef tenderloin, fresh parsley, bread |

Olive oil, red wine vinegar, onion, garlic, salt, pepper,
bay leaves |
Ingredients

1 1/2 pounds beef tenderloin or boneless sirloin, cut into
2inch thick pieces |
 |
1/4 cup olive oil |
 |
1/4 cup red-wine vinegar |
 |
1 onion, finely chopped |
 |
1/2 cup chopped parsley |
 |
4 cloves garlic, finely chopped |
 |
1 teaspoon salt |
 |
1/2 teaspoon pepper |
 |
12 bay leaves |
 |
4 slices crusty bread |
 |
Serves 4 |
Step 1
Place beef in a large baking dish. Add oil, vinegar,
onion, parsley, garlic, salt, pepper and bay leaves. Let stand for 30
minutes.
Step 2
Meanwhile, preheat grill. Remove beef and bay leaves from
marinade. Place beef on grill rack. Place a bay leaf over each piece of
beef.
Step 3
Grill beef, turning and basting, for 15 minutes for
medium-rare.
Step 4
Discard any remaining bay leaves. Divide individual
plates. Place beef on top of bread.
