Pork Chili Verde

Ingredients
 |
2 green bell peppers, chopped |
 |
4 large, mild green chiles |
 |
5 cups water |
 |
1 (16-ounce) can stewed tomatoes |
 |
2 tablespoons beef bouillon granules |
 |
1 tablespoon dried oregano |
 |
1 tablespoon cumin seeds |
 |
1 tablespoon coriander |
 |
8 ounces ground pork |
 |
1 onion, chopped |
 |
6 tablespoons butter or margarine |
 |
1/3 cup all-purpose flour |
 |
Serves 6 |
Step 1
Combine green peppers, chiles, water, tomatoes, bouillon
granules, oregano, cumin and coriander in a large pot. Cook over medium heat
until peppers are tender.
Step 2
Meanwhile, cook pork and onion in a medium skillet over
medium heat, stirring occasionally, until pork is browned and crumbly, about
ten minutes.
Step 3
Drain pork mixture. Add to chili mixture. Simmer for 20
minutes.
Step 4
Heat butter in a mediium skillet over medium-low heat. Add
flour. Cook, stirring, until flour browns, about 2 minutes. Add flour
mixture to chili. Cook, stirring, until thickened.

Money Savers If fresh green
chiles are not available in your grocery, look for dried Anaheim or New
Mexico varieties available from mail order spice companies. Soak in warm
water for 20 minutes, then deseed and chop. |
Serving Variation
To thicken the chili, add 1/2 cup cooked brown lentils in
step 1 and omit step 4 |
