Beef Tacos with Zucchini Salsa

Ingredients
 |
1 pound beef top round steak |
 |
2 tablespoons fresh lime juice |
 |
2 teaspoons vegetable oil |
 |
2 large cloves garlic, crushed |
 |
Zucchini salsa: |
 |
1 cup chopped tomato |
 |
1/2 cup diced zucchini |
 |
1/4 cup chopped cilantro or parsley |
 |
1/4 cup prepared salsa |
 |
1 tablespoon fresh lime juice |
 |
8 flour tortillas |
 |
1 lime, cut into wedges |
 |
Serves 4 |
Step 1
Combine beef, lime juice, vegetable oil and garlic in a
resalable plastic bag. Refrigerate for 20 minutes, turning once.
Step 2
Preheat grill. Meanwhile, for zucchini salsa, combine
tomato, zucchini, cilantro, salsa and lime juice in a small bowl.
Refrigerate. Wrap tortillas in foil.
Step 3
Remove steak from marinade. Grill steak, turning
occasionally, for 10 minutes for medium. Place wrapped tortillas on a far
corner of grill to warm for 5 minutes.
Step 4
Trim steak. Cut crosswise into thin slices. Serve beef
with tortillas, lime wedges and zucchini salsa.
