Beef Tacos with Zucchini Salsa

Ingredients

1 pound beef top round steak

bullet

2 tablespoons fresh lime juice

bullet

2 teaspoons vegetable oil

bullet

2 large cloves garlic, crushed

bullet

Zucchini salsa:

bullet

1 cup chopped tomato

bullet

1/2 cup diced zucchini

bullet

1/4 cup chopped cilantro or parsley

bullet

1/4 cup prepared salsa

bullet

1 tablespoon fresh lime juice

bullet

8 flour tortillas

bullet

1 lime, cut into wedges

bullet

Serves 4

Step 1

Combine beef, lime juice, vegetable oil and garlic in a resalable plastic bag. Refrigerate for 20 minutes, turning once.

Step 2

Preheat grill. Meanwhile, for zucchini salsa, combine tomato, zucchini, cilantro, salsa and lime juice in a small bowl. Refrigerate. Wrap tortillas in foil.

Step 3

Remove steak from marinade. Grill steak, turning occasionally, for 10 minutes for medium. Place wrapped tortillas on a far corner of grill to warm for 5 minutes.

Step 4

Trim steak. Cut crosswise into thin slices. Serve beef with tortillas, lime wedges and zucchini salsa.

You can prepare the tomato-zucchini salsa in step 2 up to 4 hours ahead.

Money Savers

Fresh tomatoes can be pricey when not in season. Look for Italian tomatoes. They are usually less expensive off season and have a better texture and flavor than the off-season globe variety.

Serving Variation

For a chili flavor, ad 1 teaspoon ground cumin to the zucchini salsa.
