Ingredients

1 pound ground beef

bullet

2 teaspoons chili powder

bullet

1 (10-ounce) can tomato soup

bullet

1 cup chopped green bell pepper

bullet

1 (16-ounce) can corn, drained

bullet

1/2 cup salsa

bullet

1/4 cup water

bullet

1 (8 1/2-once) package corn muffin mix

bullet

Serves 6

Step 1

Preheat oven to 400°F. Grease a medium casserole. Heat a large skillet over medium heat. Add ground beef and chili powder. Cooking, stirring, until beef is browned and crumbly.

Step 2

Add soup, bell pepper, corn, salsa and water to skillet. Cover, cook for 5 minutes.

Step 3

Spoon beef mixture into prepared casserole. Mix corn muffin batter according to package directions. Spoon around edges of beef mixture, leaving an opening in center.

Step 4

Bake casserole until corn bread is browned, about 20 minutes.

This tamale pie can be a real budget stretcher if you have a crowd to feed. To serve an additional 2 to 4 people, use 2 packages of corn muffin mix and bake the pie in a 9x13-inch dish.

Serving Variation

To make this pie even tastier, add 1 can of chopped green chilies in step 2.
