Ingredients

1/2 head iceberg lettuce

bullet

2 large tomatoes

bullet

12 slices bacon

bullet

1/3 cup mayonnaise

bullet

1/4 teaspoon pepper

bullet

6 flour tortillas

bullet

serves 6

Step 1

Cut lettuce into fine shreds. Chop tomatoes.

Step 2

Cook bacon in a large skillet over medium heat until crisp, about 10 minutes. Drain and cool.

Step 3

Combine lettuce, tomatoes and mayonnaise in a large bowl. Add pepper. Mix well.

Step 4

Spread about 1/2 cup lettuce mixture down center of each tortilla. Add 2 strips bacon. Fold in right edge. Roll tortilla to enclose filling.

You can fully prepare these burritos up to 2 hours ahead. Cover with plastic wrap until ready to serve.

Money Savers

You can save some money on these burritos by using only 6 slices of bacon instead of the 12 slices called for in the recipe. For a richer bacon flavor, add 1 teaspoon bacon drippings to the mayonnaise.

Serving Variation

Spice up the filling by adding 1 cup shredded pepper Jack cheese in step 3.
