Bread crumbs, dill, garlic powder, mayonnaise

Ingredients

1 cup seasoned bread crumbs

bullet

1/2 teaspoon garlic powder

bullet

1/2 teaspoon dill

bullet

1/4 cup mayonnaise

bullet

4 teaspoons water

bullet

6 cod fillets (6 ounces each)

bullet

Serves 6

Step 1

Preheat oven to 425'F. Place bread crumbs in a shallow dish. Add garlic powder and dill; mix well. Blend mayonnaise and water in second shallow dish.

Step 2

Pat fillets completely dry with paper towels. Spray a baking sheet with nonstick cooking spray.

Step 3

Dip fillets in the mayonnaise mixture, coating completely, then roll in bread crumbs. Place on a prepared baking sheet; do not allow fillets to touch.

Step 4

Bake for 20 minutes or until fish flakes easily with a fork.

You can prepare this recipe through step 3 up to 4 hours ahead. Refrigerate, covered with plastic wrap, until ready to cook.

Frozen fish fillets are always available in the freezer section of the supermarket. They will keep for 2 to 3 months in your freezer and often cost less than fresh fillets.

Serving Variation

For a pronounced peppery taste, use parsley flakes instead of dill and add 1/8 teaspoon cayenne pepper to the bread crumbs.
