Spaghetti with Garlic and Oil

garlic, olive oil, salt, spaghetti

Ingredients

2 tablespoons minced garlic

bullet

1/2 cup olive oil

bullet

1 teaspoon salt

bullet

1 pound spaghetti

bullet

1/4 cup minced fresh parsley

bullet

Serves 4

Step 1

Combine garlic, oil and salt in a small skillet or saucepan over medium-low heat. Cook, stirring occasionally, until garlic is golden, about 5 minutes. Remove from heat.

Step 2

Meanwhile, cook spaghetti according to package directions. Drain well, reserving a bit of the cooking water.

Step 3

Pour the garlic mixture over the pasta in a serving bowl, adding some of the cooking water if pasta seems dry.

Step 4

Sprinkle parsley over pasta. Serve hot.

You can prepare the garlic oil in step 1 up to 48 hours ahead. Keep in a tightly covered container.

Money Savers

Fresh garlic is least expensive when you grow your own. Save cloves that have started to sprout. Plant them in the autumn and by summer you'll have a whole head of garlic for each clove you planted.

Serving Variation

Put a sparkle into this pasta dish by adding 1 cup of chopped fresh herbs in step 3.
