Shallot, poppy seeds, Apple, Lettuce and mandarin oranges

Honey, cider vinegar, olive oil, Dijon mustard, salt, pepper

Ingredients

1 Shallot

bullet

1/4 cup honey

bullet

3 tablespoons cider vinegar

bullet

2 tablespoons olive oil

bullet

2 teaspoons Dijon mustard

bullet

2 teaspoon poppy seeds

bullet

1/2 teaspoon salt

bullet

1/4 teaspoon pepper

Salad:

6 cups green leaf lettuce

bullet

1 (11 ounce) Can Mandarin Oranges

bullet

1 Apple, chopped

bullet

Serves 4

Step 1

Mince shallot. Place in a medium bowl. Add honey, vinegar, olive oil, mustard, poppy seeds, salt and pepper. Whisk until very well mixed.

Step 2

For the salad, tear greens into bite-size pieces. Place in a large bowl.

Step 3

Drain; oranges add to greens in bowl. Add apple.

Step 4

Pour dressing over salad. Toss well.

Olive oil has allot of flavor. Especially extra virgin but at a price. Canola, peanut or plain vegetable make a lighter tasty base for this salad dressing, and will cost a fraction of what olive oil will cost.

Serving Variation

Vary the fruit according to the season. Pears, strawberries and kiwifruit will all benefit from this delicious dressing.
