Poppy Seed Dressing with Salad Greens

Honey, cider vinegar, olive oil, Dijon mustard, salt,

Ingredients

1 Shallot |
 |
1/4 cup honey |
 |
3 tablespoons cider vinegar |
 |
2 tablespoons olive oil |
 |
2 teaspoons Dijon mustard |
 |
2 teaspoon poppy seeds |
 |
1/2 teaspoon salt |
 |
1/4 teaspoon pepper |
Salad:
 |
6 cups green leaf lettuce |
 |
1 (11 ounce) Can Mandarin Oranges |
 |
1 Apple, chopped |
 |
Serves 4 |
Step 1
Mince shallot. Place in a medium bowl. Add honey, vinegar,
olive oil, mustard, poppy seeds, salt and pepper. Whisk until very well
mixed.
Step 2
For the salad, tear greens into bite-size pieces. Place in
a large bowl.
Step 3
Drain; oranges add to greens in bowl. Add apple.
Step 4
Pour dressing over salad. Toss well.
