Crunchy Potato Wedges

Cornflakes, potatoes

Food items that are probably in your frig!

Seasoned salt, oil, onion salt, garlic salt

Ingredients

2 cups crushed cornflakes

bullet

1/2 teaspoon seasoned salt

bullet

1/8 teaspoon onion salt

bullet

1/8 teaspoon garlic salt

bullet

6 medium potatoes

bullet

1/4 cup vegetable oil

bullet

Serves 6

Step 1

Preheat oven to 400˚F. Grease a baking sheet. Combine cornflakes, seasoned salt, onion salt and garlic salt in a shallow bowl; mix well.

Step 2

Cut each potato into 8 wedges.

Step 3

Combine wedges and oil in a medium bowl. Stir well. Coat with crumb mixture.

Step 4

Place potatoes on prepared baking sheet. Bake until tender, about 30 minutes.

Cornflakes are not the only cereal that will work with these hearty wedges, and not necessarily the least expensive. Shop around for bran or oat flakes, or any crunchy unsweetened cereal flakes.

Serving Variation

You can use the crumb mixture to coat chicken, fish or pork chops for a crispy exterior.
